
Sole – pumpkin – horseradish – orchids – ratsina — at Silvio Nickol Gourmet Restaurant im Palais Coburg.
After a visit to Tian the day before, I had the pleasure to visit the 2 Michelin star restaurant of Silvio Nickol in Palais Coburg. I had no expectations, except that I would go for the full tasting menu:)
The setting was superb. Palais Coburg is probably one of the poshest hotels in Vienna and you get into the restaurant via an elevator. I was seated on a rather large table with the view on a wall with wine bottles, but more intriguing with view on a flat screen TV above that wall with a live feed to the kitchen. As I am fascinated to see how a dish springs to life on a plate, I could not ask for more. For the rest, I felt welcomed, the wine pairing was the level of the food.
Dishes I’d like to eat again:
- the duck liver: presentation just stunning… the play of taste and textures as well. This is the stuff that makes me a happy person:)
- Sole with pumpkin
- the blue cheese with pear and pistachio
- Chocolate with beetroot: what a combo:)
With all modesty from my side, my impression was that some dishes would not be out of place in a 3-star restaurant, however, not all of them (even though the latter still were delish…). I went back 8 months later to Vienna and revisited the restaurant (and Steirereck the day before), not even wondering whether I should go or not. A top notch culinary experience in Vienna, quiet surroundings, nice visual setting and getting a bit of pampering… this should be on your list;)
