Wiget Adelboden (Steinen, CH)

Combining work and study is proving to be even more time consuming than anticipated; luckily I manage to free up time to enjoy some great food and cuisine:) The updates do lag a bit, for which apologies!

A short while ago I took the 2hr train and bus ride from Zurich to the village of Steinen near Schwyz, the birthplace of Switzerland,  to visit the namesake restaurant of chef Franz Wiget. A very charming establishment that carries a 18/20 Gault-Millau rating and 2 Michelin stars, with the latter since 2009.

The dining room itself is relatively small and decorated (as the rest of the building) in Swiss chalet style. Cozy and a refreshing change from the sometimes minimalistic decors you find elsewhere. The welcome as well as the service throughout was very friendly, correct and professional.

201608 - Wiget Adelboden - 18Foodwise I went for the degustation menu and succumbing to my weakness I asked if they would be able to squeeze in the separate chocolate dessert as well… The dishes did not give the perception of being complex (what does not mean they’re not, don’t get me wrong;)), with the desserts packing the most color on the plates. As far as my limited experience goes, I must say the cuissons were top, no strange (or dull) taste combinations. Very solid cooking and presentation, I was a very happy man when I left the establishment!

Dishes that still linger and wet my appetite again:

  • Gooseliver (and praline) with local Felchlin chocolate
  • Cheese gnocchi
  • Chocolate dessert with cassis and cherries

At the end of the meal I asked to call a taxi, however, the lady of the house offered a ride to the station as she had to go there as well. I know it maybe sounds like a small thing, but I appreciated that a lot. An interesting one for the chocolate enthusiasts: she pointed out the Felchlin factory when we drove past mentioning that once a year or so (I hope my memory does serve me well here) chef Wiget makes a menu incorporating chocolate in every dish, especially for Felchlin. Talk about heaven… I also understood that Felchlin is used widely by top chefs / patissiers / …

Overall it was for me a great dining experience and worth spending 4 hours on the train and bus for! If you would think of going, don’t doubt;)
